Easy Cheeseburger Pie

1 lb lean (at least 80%) ground beef 1 large onion, chopped (1 cup) 1/2 teaspoon salt 1 cup shredded cheddar cheese (4 oz) 1/2 cup Bisquick™ Original Pancake & Baking Mix 1 cup milk 2 eggs 1 teaspoon vegetable oil Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese. In medium bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate. Bake 29 to 33 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

Campbell's Beef Taco Skillet

1 lb ground beef 1 can Campbell's Tomato Soup 1 cup Pace Chunky Salsa or Picante Sauce 1/2 cup water 8 flour or corn tortillas  1 cup shredded cheddar  Cook beef in skillet until browned. Pour off fat. Add soup, salsa, water, tortillas and half the cheese. Heat to a boil. Cover and cook over low heat 5 minutes or until hot. Top with remaining cheese. Serves 4.

Spice Mix for Tacos

1 teaspoon salt  2 tablespoons chili powder  2 tablespoons paprika  1 teaspoon cumin  1 teaspoon garlic powder 

"Happy " Joes

One of my girlfriends from church brought sloppy joes for dinner once when my children were small. They mistakenly called them "happy" joes. The name has stuck. 2 lb lean ground beef, browned and drained Add: 1/3 cup chopped onion  2 1/2 teaspoons Worcestershire sauce  2 1/2 tablespoons brown sugar  1 rounded tablespoon prepared yellow mustard  3/4 teaspoon chili powder  1 1/3 cups ketchup  Salt and pepper to taste Serve on burger buns.

Meat and Potato Pie

1 can cream of mushroom soup  1 lb lean ground beef  1 egg, slightly beaten 1/2 cup dry bread crumbs  1/4 tsp salt Dash pepper 2 cups mashed potatoes  1/4 cup grated cheese  Mix thoroughly in medium bowl: 1/2 can soup, beef, egg, breadcrumbs and seasonings. Press firmly in a 9 inch pie pan. Bake at 350 degrees for 25 - 30 minutes. Drain off any fat. Mix remaining soup with already mashed potatoes. Frost meat pie, sprinkle grated cheese on top. Return to oven for 5 - 10 minutes.

Sugar Cookie Bars

For the bars, in a large bowl, cream together the butter, granulated sugar and powdered sugar until light and fluffy. Add the eggs and vanilla and mix for 1-2 minutes. Stir in the lemon zest (optional), flour, baking powder and salt. Mix until combined. Lightly grease a 9X13-inch baking pan with cooking spray or line with parchment paper and grease. Caprese Salad

This is probably my all time favorite salad/meal/yummy food. Slices of fresh Roma tomatoes, fresh (preferably buffalo) mozzarella cheese, and fresh basil. I like it naked. Depending on your personal preference, you may wish to drizzle (good quality) extra virgin olive oil and sprinkle a little kosher salt and/or crack some peppercorns over the top.
