  FOR THE MEATBALLS 2 eggs 1/2 cup milk 3 slices white bread (crumbled) 2 lb. ground chuck 1/2 cup onion (finely chopped) 2 Tablespoons parsley (chopped) 1 clove garlic (crushed) 1 teaspoon salt 1/2 teaspoon pepper FOR SERVING: 1 pkg. (1 lb.) Spaghetti 1/2 cup grated Parmesan cheese  FOR THE SAUCE: 1/4 cup olive or vegetable oil 1/2 cup onion (chopped) 2 cloves garlic (crushed) 2 Tablespoons sugar 1 Tablespoon salt 1-1/2 teaspoons dried basil leaves 1/2 teaspoon fennel seed 1/4 teaspoon pepper 1 can (2 lb 3 oz.) Italian-style plum tomatoes 2 cans (6-oz. Size) tomato paste 1/2 cup water TO MAKE THE MEATBALLS: Preheat oven to 450 degrees F.  Put eggs in a medium-sized bowl and beat slightly with a fork or rotary hand beater. Thai Chicken Pasta

  1-lb boneless, skinless chicken breast cut into large chunks 1 pkg frozen stir-fry veggies 8 ounces cooked fettuccine noodles Seasoned chicken, stir-fry, add vegetables and cook until tender crisp. Add cooked pasta and pour sauce over to toss. For Sauce, sauté: 2 garlic cloves, minced Add and blend until smooth: 1 Tb. Oil 1 cup chicken broth 1 Tb lemon juice 1 Tb soy sauce 1 Tb light caro syrup 2 tsp curry powder 1 tsp paprika 5 drops (or more) hot pepper sauce Bring to boil and simmer until slightly thickened .

Easy Fettuccine Alfredo for Two

First, bring a large pot of water to a boil. 2. Meanwhile, in a 2-cup glass measuring cup, add the cream and butter. Pulse in the microwave for 30 seconds each time, until the butter is melted and the mixture is steaming. Set aside. 3. Grate your cheese, if you haven’t already. 4. Once the pasta water is boiling, add a few big pinches of salt, followed by the noodles. Stir once, and cook according to package directions. 5. Lasagne

Lasagna Serves 6 to 8 1 (8oz) package lasagna noodles (cooked) 1 lb mozzarella cheese, grated 1 (16oz) carton ricotta or cottage cheese (depends on who I'm making it for) - mixed with 2 eggs and 1 TBSP parsley 1 lb ground round (cooked and crumbled) Add to cooked meat: 4 (15oz) cans tomato sauce 1 TBSP sweet basil leaves 2 TBSP garlic powder 1 tsp sugar Layer in 8x12” pan: noodles, cottage cheese mixture, tomato sauce, then mozzarella cheese. Repeat for 2-3 layers. Bake uncovered for 20-30 minutes at 375 degrees F. *For Spinach variation: Add 1 (10oz) package of frozen spinach, thawed and drained, 1/2 c. sautéed onion and 2-3 sautéed chopped or crushed garlic cloves to the cottage cheese mixture and leave ground round out of the tomato sauce.
