Overnight Sweet Rolls

1/2 cup dry pudding mix* or small package of vanilla cook and serve pudding mix 1/2 cup brown sugar 2 teaspoons cinnamon 1/2 cup melted butter  (mixed  with  1 teaspoon vanilla if you make your own pudding mix) Chopped pecans Frozen roll dough Grease baking pan well. (I've used a bundt pan, 13x9x2" baking pan or 2 - 9" cake pans.) Toss frozen roll dough into the well greased pan. Sprinkle with chopped pecans and the dry mixture. Drizzle the melted butter/vanilla mixture over all. Cover with plastic wrap and let set overnight.  Bake in a 350 degree oven for 25 - 30 minutes. *Dry pudding mix: 1 cup granulated sugar 3/4 cup cornstarch 3/4 cup dry milk 1 teaspoon kosher salt

Pizza Dough

When I lived in Hawaii the nearest pizza joint was a half hour drive, the second nearest was 45 minutes. Out of necessity I learned to make it myself. I would frequently make it for guests and it's still a family favorite today, particularly the BBQ Chicken variety. Per Crust: Mix: 2 ½ - 3 c. all-purpose flour 1 tsp. salt Develop yeast and then add to flour: 1 c. warm water 1 packet or scant Tbsp. active dry yeast (or instant, your choice) 1 Tbsp. sugar Add to flour w/yeast: 2 - 4 Tbsp. olive oil Knead dough adding just enough extra flour to have a tacky, but not sticky dough. (A little bit sticky in feel, but does not stick on your hand.) Oil the dough and let rise until double. At this point, any of the dough that will not be used right away can be frozen for future use, or par-baked in a 500F degree oven for 6 minutes, wrapped in plastic and then frozen. Chocolate Chip Cookies

We've enjoyed this tried and true recipe for over 22 years. Don't be surprised by the cake flour. It's been one of my favorite "secrets" that I've shared and applied to many other recipes. I typically make my chocolate chip oatmeal cookies, but when I make these this is the response: "Mom, these are the best chocolate chip cookies that you've ever made!!"  ~NK/11-17-10 3-1/4 cups all purpose flour 1 cup cake flour 1 teaspoon baking powder 1 teaspoon baking soda 1-1/4 cups sugar 1-1/4 cups brown sugar, packed 1-1/2 cups softened butter 2 eggs 1 tablespoon vanilla 3 cups semi-sweet chocolate chips  Heat oven to 375 degrees. Sift dry ingredients together. Beat butter and sugars until creamy. Add eggs and vanilla. Gently beat in flour mixture. Stir in chocolate chips.  Drop dough onto ungreased cookie sheets. SALAD 2 (12oz) bags broccoli slaw bacon, cooked crisp and crumbled toasted slivered almonds craisins DRESSING Mix well: 1 cup mayonnaise 1/2 cup brown sugar 1 tablespoon vinegar

Chewy Chocolate Chip Oatmeal Cookies

1 cup butter, softened 1 cup packed brown sugar 1/2 cup white sugar 2 eggs 2 teaspoons vanilla extract 1 1/4 cup all-purpose flour (adjust the flour as needed,based on the climate) 1/2 teaspoon baking soda 1 teaspoon salt 3 cups quick cooking rolled oats 2 cups semi-sweet chocolate chips DIRECTIONS: 1. Preheat the oven to 325 degrees F (165 degrees C) 2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs and vanilla. Combine flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets. (I line mine with parchment paper.) 3. Bake for 12 - 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

PARMESAN CHEESE TOAST

Use "texas toast" bread. Butter, sprinkle with grated parmesan cheese   and grill on both sides…Enjoy!!

BBQ BABY BACK RIBS

From: Steve Raichlen’s BBQ USA Take 2 cups packed brown sugar, 1/2 cup kosher salt and 1/4 cup freshly ground pepper. Dry rub your baby back ribs with it.  We rubbed 3 racks. Let ribs "cure" in the refrigerator for 4 hours. Use a damp paper towel to remove excess rub. Grill over indirect heat for 1 1/2 hours. Serve with BBQ sauce. First, for me personally, next time I will use about half of the pepper. Second, the cured ribs by themselves are good. Slathered with sauce they are out of this world. I am not much of a meat eater, but if you are going to indulge, you may as well do it right!!

LEMON POPPY SEED MUFFINS

1 lemon cake mix 1 package of lemon pudding 1 cup sour cream 4 eggs 1/2 cup water 1/2 cup vegetable oil 3 Tbsp poppy seeds 400 degree oven/15 - 18 minutes or until done.

CHOCOLATE CHIP AND TOFFEE COOKIES

1 cup butter, softened 1 1/4 cups firmly packed brown sugar (I used light) 1/2 cup sugar 2 large eggs 1 tsp. vanilla extract 2 cups all-purpose flour 1 tsp. baking soda 1/2 tsp. salt 2 1/2 cups quick-cooking oats 1 cup toffee bits 1 1/2 cup semisweet chocolate chips Beat butter and sugars until fluffy. Add eggs and vanilla, beat well. Combine flour, soda, salt. Add to butter. Beat until combined. Stir in oats, toffee bits and chocolate chips. Drop by tablespoons and bake on parchment lined baking sheets in a 350 degree oven for 8 - 10 minutes. Cool on pan for 2 minutes. Transfer to wire racks to complete cooling. *We were having family night. I just left them on the pan to cool. *KK has declared this her new favorite cookie. *Recipe comes from Paula Deen. She calls for 1 cup of chocolate chunks. I used chips and added an extra 1/2 cup, because more chocolate = more better!!

SOUR CREAM BANANA NUT BREAD

When I was 16, I went to visit my brother and his small family. We made this bread while I was there and I have used this recipe ever since. This is one of my most requested recipes. Cream: 1-½ cup sugar ¾ cup shortening Add: 2 eggs 1 teaspoon vanilla 1 cup sour cream 2 large ripe bananas, mashed Mix dry ingredients: 2-½ cups all purpose flour 1 teaspoon baking soda 1-½ teaspoon baking powder Add dry ingredients to the wet ingredients. Stir just until combined. Fold in ½ cup chopped nuts. Bake at 375 degrees for 50 – 60 minutes, or until a toothpick comes out clean. Makes 2 loaves.
