Anthony's Cream of Broccoli Soup
Ingredients:
1 med carrot, peeled and diced
1/2 med onion, peeled and diced
1 celery stalk, diced
1 T. oil
3 chicken bouillon cubes
3 c. water
Salt to taste
Pepper to taste
2 c. broccoli florets & stems cut small
1/4 c. butter
1/4 c. flour
1 c. cream (not milk!)
Directions:
1. Sweat carrot, celery, and onion in oil, just until soft, no browning.
2. Add the bouillon, water, salt, pepper, and broccoli to pot and simmer for 10 minutes.
3. Melt butter in a small pan, add flour (this is your roux). Cook roux for 8-10 minutes on medium heat. Let cool. Add cooled roux to soup, bring to a boil and simmer for 5 minutes.
4. Remove from heat and add cream.
