Bruschetta

  •  tomatoes peeled, seeded, chopped, and drained in sieve for 20-30 minutes
  • 1 clove minced garlic
  • 10-12 fresh basil leaves, shredded
  • capers, if desired
  • 1/3 cup olive oil
Brush slices of crusty Italian bread with olive oil and toast under broiler on both sides. Spoon bruschetta over the top.
