Chicken Salad Sandwiches

Shredded white meat from 2 cooked chickens

Mayonnaise (enough to moisten and keep chicken together, but not make it gloppy) Evaporated milk (add just enough to make the salad more moist and keep it all together well)
2 finely minced green onions, whites and greens
Chopped celery from about 1-1/2 - 2 stalks (eyeball it)
Celery seed (a nice sized pinch)
Parsley (eyeball it)
Seedless red grapes, sliced (maybe 1-1/2 - 2 cups)

Serve on croissants
